Easy Santa Fe Quinoa

Tonight’s meal was an experiment. Luckily, it was a success to both of us. I’ve been wanting to try my hand at quinoa because I’ve heard it’s a great grain with protein and fiber. (Which I could use more of both.) So we thawed/cooked some chicken breasts and added a bit of that new Philadelphia cooking cream to it. I used the Santa Fe flavor for a zesty kick. Then added a side of green beans for a veggie and TA-DA!!! Genius! and Success!!

*Note- When using Quinoa I buy the pre-rinsed kind to cut out an extra step. Then we used a 2:1 ratio of water to quinoa. It fluffs up a lot so you really only need like half a cup of quinoa for 2 people. Also add a dab of oil to your rice cooker to keep it from sticking on the bottom. 
1/2 cup Quinoa (pre-rinsed)
1-2 tbsp Philadelphia Cooking Cream (Santa Fe)
2 thawed chicken breasts
1 can of green beans

(Left to Right) Quinoa, Philadelphia cooking cream, diced chicken
Final product with green beans as a side dish.
